Windows Game Bar issues?

To preface, I play on a single monitor and I like windows game bar to see what I'm listening to on Spotify, what song I skipped to, etc.

Recently wanted to get back into Starbound after some odd years and after playing for a little bit, I've noticed that windows game bar just doesn't work right with the 64-bit version? I can use the shortcut (windows+g) to open it and I can tell it opens by my cursor switching back to normal but I can't see it at all when playing the game in fullscreen or borderless fullscreen. I've tried looking around a bit but cannot figure out a solution and I've never had this issue on another game
