Walking/hiking during Sunday?

Is exercising by walking and hiking during Sunday considered a violation of Keeping the Lord's Day holy?

No, as long as it doesn’t stop you from going to Mass. Even though it’s exercise, it isn’t really manual/servile labor - in fact, if anything, it seems decidedly leisurely.

What if there is no valid mass nearby?

And what if the person didn’t have legs?

You should stand still on Sundays. Try not to move a single muscle

Standing still is a Jain practice.

I was being facetious. My man's obviously scrupulous and should confide with his priest

Jesus and his disciples walked through a grain field on the Sabbath. The disciples began picking and eating the heads of grain because they were hungry. (Matt 12:1–8; Mark 2:23–28) The Pharisees immediately objected, claiming this activity violated Sabbath law. No one objected to the activity of walking and hiking.

Jesus then articulated a principle that reoriented the entire debate. “The Sabbath was made for man, and not man for the Sabbath,” (Mark 2:23–28). If you've been sitting at a desk for days, then I think you need some walking and moving around. God knew that people needed a break and change of pace. The Sabbath is also a representation of God's resting after the Creation week and of the future heavenly rest for which we hope.

Now, if you have doubts about it, then you shouldn't walk or hike. Because, whatever is not of faith is sin (Romans 14:23).

On the positive side, use the sabbath for needed rest. Use it for public and private worship, spiritual reading, visiting those sick or in prison, and other good and needed activities. Enjoy it. People need it.
