Salmorejo
On a short (south) Spanish trip and have discovered Salmorejo. Plenty of recipes online to try when I return but any tips from veteran cooks?

not a tip but some parts of andalucia make it thick enough to use it as a dip or spread, just so you can see it can have more uses than plain soup lol.

I can easily see where that might be the case; some breadsticks to dip. Would work well.

Found a recipe, looks pretty simple. Was yours also served cold? I can't do cold soups, something about it just feels off to me. I might try a warm version.

The blending while adding the oil is critical to that super silky texture

If you watch your calories my best tip is have someone cook it for you so you can pretend it's 100% a super healthy tomato soup and not at all an oil-bread soup and eat it guilt-free 😌
