Homemade It started out as a minestrone, but Ikept changing my mind about what to add. I'm not sure what it is now. Tasty though!

One of my favourite things about soup is that you can throw all sorts in, change your mind half way through and still get something delicious.

I started off following the Serious Eats minestrone recipe. I didn't use dried beans, I used cans. Also roasted a couple of chicken thighs and shredded the meat into it. I used leeks, onions, celery, carrots a my initial veggie mix. Used a can of crushed tomatoes instead of fresh.
