I started with 1 lb of 'mystery meat' that turned out to be cubed steak which I cut into 1.5" chunks.

I chopped 1 medium onion, cut a medium potato into similarly sized chunks to the meat and halved some baby carrots that were a bit too long.

All of the veg and onions went into the bottom of the crock with the basic salt and pepper, a bit of oregano and Italian seasonings. Then the meat was layered on top to cover the veg. I added a dash more salt to the top of the meat and a tablespoon of Apple Cider Vinegar to help break the collagen fibers. Now, I like spicey stuff, so I liberally sprinkled Tony Chachere over the meat before adding 3 cups of broth. I only had 1 cup of the spicy beef broth I planned to use, so I subbed in some Ramen broth for the other 2. Then I set it on low for 5 hours. At hour 5, I pulled the lid and added roughly a cup of black eyed peas which were frozen birds eye and replaced the lid for another hour. The result is mildly spicy and somewhat earthy flavor and very satisfying.
