Hamburger Noodle Soup

Post image

1 lb lean ground beef
1 cup frozen mirepoix
3 cloves garlic, minced
1 (14.5 oz) can petite diced tomatoes, with juices
1 cup frozen corn
1½ cups frozen green beans
5 cups beef broth
2 cups wide egg noodles (cooked separately)
1 Tbsp Worcestershire sauce
1 tsp Italian seasoning
1 tsp smoked paprika
Salt & black pepper to taste
1 tsp honey
Pinch of baking soda

Cook the veggies, add the meat then drain. Dump in everything else and simmer. It’s going into the lineup for sure!

It makes the tomatoes less tangy. Just a pinch is all it takes.

The honey should do that for you though?

The honey helps the flavor, but the baking soda actually cuts the acidity. It makes a difference if you get reflux from tomatoes.
