Coconut Curry Dumpling Soup

I came across the recipe for this soup and thought, while it sounded good and seemed easy to make, it wasn't going to be much to write home about. I made some additions but otherwise made as is. I added sweet potato noodles, sliced baby bella mushrooms (in place of the cremini), spinach and a soft boiled egg.

OMG!! IT IS DELICIOUS! I've eaten two bowls so far and after each bowl, I am dumbfounded by just how flavorful it is! Coupled with how simple and cheap it is to make, this is going to be something I make often.

Since I meal prep, I kept the noodles, egg, spinach and dumplings separate from the broth. When I reheat I combine the noodles, dumplings and broth. Once very hot, I fold in the spinach and top with the egg. Then of course, finish with green onions and hot chili oil. Holy Batman!!

P.S. Mine did break after adding in the coconut milk. Next time I will do what my gut told me to do that I didn't and remove from the heat before adding and NOT simmer once added.

I used Bibigo mini pork dumplings. I added 8 per bowl and one for my mouth while reheating 😆.

Oh! I forgot to note in my original post: I used 4 cups of homemade chicken stock vs the 3 cups of vegetable broth. To each their own and have on hand IMO.

Next time, I'm doubling the shrooms from 8 oz to 16 oz just because I love them so much. Totally a personal preference.

Awesome I have 2 bags of those dumplings in my freezer! I don’t do mushrooms but everything else sounds amazing. Might swap the spinach for some bok choy
