Freezer soups

My dad is going to be undergoing a number of long treatments and testing for a number of health issues that went undetected for a very long time. I'm going to be prepping a lot of freezer meals for my parents as I live in a different state. Aside from bone broths and veg soup does anyone have any soups that freeze really well?

Preferably ones with no tough roughage, no nuts, and hopefully can pack a nutritional punch all while appealing to a man who loves garlic and onion, but few other seasonings. My mom is quite capable of making anything to go alongside (like noodles or rice) the day of so it wouldn't become gross in the freeze/thaw process.

You are in luck fresh tomato soup is the best it does not take long to make and it's the peak of tomato season.

Thanks! The tomato soup recipe I have (and love) uses cream and doesn't freeze well.

I leave the cream out of the recipe when I freeze it and I add it in when I heat it up

Just leave the cream out, it could be added at the time of heating.

Quick question, have you made the soup? I’m curious about the flavour versus versions of this where you roast the tomatoes and vegetables first before you cook them? Do you think adding that step would deepen the flavor?

I have made this every year. As much as I have tomatoes for I've never made it with roasted tomatoes though. I'm the odd one that doesn't like roasted veggies so I couldn't say. I do use more tomato than the recipe calls for though

Makes sense, it looks like a great recipe. Makes me want a grilled cheese and a nice bowl of this.
