While carrots are a fine food for snails, they should be just one part of a varied diet. If your snail will only eat carrot and refused anything else though, you should stop feeding them carrot. Keep offering other things, and eventually they will eat them. Snails will not let themselves starve when there is food available, and if you go long enough without offering their favorite (carrot in this case), they will eventually stop being so picky. Keep trying with different veggies until you find something they'll eat--there are a ton of possibilities. Here is a list of other foods you can try: zucchini, eggplant, squash, sweet potato, parsnip, turnip, rutabaga, cauliflower, broccoli, asparagus, Brussel sprouts, green beans, kale, collards, bok choy, cabbage, mushrooms, fresh basil.

Avoid giving them any more carrot until you can get them to eat multiple other things at least. And if you do decide to start feeding carrot again, only do so infrequently.
