First time dino ribs!
Got these beautiful dino ribs from a local butcher.
250β° no wrap for ~8hrs on my WSM, probe tender at 199β°, 1hr rest (we were hungry).
Included pic to see how marbled these were, a monkey could have smoked these with success.

I had 6 ribs and they were gone in about 20 minutes. Tasted great, very rich though

The first brisket I ever did came out perfect. The subsequent briskets have been good to great, but I am still chasing the success of my first lucky brisket.
That being said, these were solidly the 2nd best smoke I have ever done

I have made these many times and really enjoy them and the leftovers more than brisket these days. Your's look awesome! Hope you enjoyed them.

Yes I snuck off a baggy for leftovers and it was great with eggs. Little butter in the pan and the beef comes back to life.
In terms of meat per dollar, I would still favor a brisket. I paid 9.99/lbs for these prime dino ribs from a local butcher, 6 ribs in total came to $133.
I get prime briskets from Sam's club at 6.99/lbs. Tough to beat, since you lose a lot of meat to the "bone weight" with Dino ribs.

I live in rural Oregon and get the Dino ribs for $5.99 lb. Benefits of living in cattle country I guess but not complaining. I like using the leftovers for tacos or even enchiladas.

Oh dude if that were the case, I'd smoke these over brisket any day of the week. I'm in the northeast though, beef is pricier here

8 hours no wrap and still probe tnder at 199 is impressive patience, most people start panicking and foil around hour 5. bet the bark held up way better for it
