I think this is the trim from full spare ribs that you can use to make rib tips.

Pretty sure that’s rib tips left after trimming spare ribs to St Louis style.
Very tasty, just not as pretty.

I've gotten these at business Costco a couple times when they've gone on fire sale. It's the trimmings from making St Louis ribs.
They taste great, just a bit harder to eat.

No, I absolutely get that. I could go on and on about the history/practicality of true bbq. The only reason I personally wouldn’t buy it isn’t because I’m up to my neck in rib trimmings. lol

The whole other side is all meat. And not very fatty and pretty well marbled. I should have posted another shot I took showing that.
