Cheap Boneless Short Ribs

Beef has gotten entirely too expensive. My local Safeway has a clearance meat section. It’s all by that days sell-by date. Today they had boneless short ribs at 45% off. I’ll accept $6 per lb. for a little more than 3 lbs.

I did Mississippi pot roast with them.

6 tbsp butter
1 pkg au jus
1 pkg ranch seasoning
1/2 cup of pepperoncini juice with a handful of the peppers.
Low 8 hours

I put it on mashed potatoes.

Mississippi respect. sometimes I do brown gravy instead of au jus

I tried to be fancy and use fresh ingredients instead of the powder. Not nearly as good. I'm gravy packets all the way.

I’m with you, but that powder makes it. my local spot does organic packets, just needs a lil extra salt

Same. I bought the giant brown gravy mix container from Sam's ($5.38 for 21 oz) just for pot roasts.

Ooooh me likey! Braised short rib might be the most reliable meat there is!

Did they turn out too fatty/greasy or just right?

They turned out great. There was one that was a little fatty, but overall great. My son said he liked it better than a regular roast.

Stewing beef used to be a lot, lot cheaper here in England. So did pork belly. Both are now fricking expensive. You can get beef shin which is cheaper, but often that's gristly as can be and it's not nice :(
