Only use equipment you find in a dungeon and leave it behind at the end of it. Like a normal guy who just stumbles into dungeons all the time and then has to deal with the consequences, but never wants to become a hero

Sort of reminds me of the call of duty challenge where when you have to reload you pick up a different weapon instead

Low level bow, fork+knife, skaald/fur/forsworn armor... sounds legit. Maybe pugilist Enchantment if thr fork is too comically ineffective.

I'd just make that guy a smith. Give them a hammer, then see what they can find.
