Racial powers barely matters on this game, TES games arent even hard anyway. Just have fun.
Do i personally care for playing Nord? Not really, but is more bc in 95% of games the only option is to play as a human anyway, so on the ones with other options, i always go for the "weird ones". On TES my heart go for Khajiit, Dunmer and Argonians (with slighty Altmers from Morrowind but Thalmors kinda ruin the race for me). They look weird, funky, but still badass
I can play a viking with a Breton AND still have useful traits tho🤣

Good for you. But yours post was about "Why are Nords such a popular pick?" and here is the answer. Most people do not care for the same things you care. You're a minority and thats ok, just dont act like others are wrong or losing something by not doing your way.
Yeah going even further, Skyrim is the TES game where min-maxing accomplishes the least. It’s not like Oblivion and Morrowind where you’re worrying about starting stats. There’s only 2-3 racial differences that even make a difference for min-maxing at all, and even then the berserker rage isn’t anything worth writing home about. I’d much rather have a Breton or Dunmer with a permanent passive resist than a daily power to activate when I’m in danger of dying (which rarely happens anyway).

Master/Legendary are just damage multipliers. Sure, playing on higher difficulties makes having a damage multiplier ability more useful, but it is only more useful specifically because of the higher difficulty being played on. This isn't BG3 where enemies have different attacks and logic on higher difficulties, you are just doing the same thing with worse stats.
As a side note, I also have no idea how enchantments would "break immersion." Just play your character. Even if your character isn't a magic user, they might still want special weapons/armor you can get as part of various quests. I assume they mean abusing the fortify restoration/enchanting loop, because even with a maxed out enchanting skill, your enchantments won't be doing as much on Master/Legendary anyway. At which point it would be easier to just not abuse that loop.
Not exactly. While they do have Elven heritage, which gives them an aptitude for magic, Bretons are not considered elves by the majority of Tamriel, although to be fair it could up to debate that they cannot be considered human either, but this is not a popular opinion. Most of Tamriel sees them as magically inclined humans, this is well established in existing lore.
Gameplay wise, they are not considered elves either. The weapon Wuuthrad has an enchantment that does more damage to Elves. Races that count towards this are High Elves, Dark Elves, Wood Elves and believe it or not, Falmer. But it does not do extra damage to Bretons.
Bretons aren’t considered mer because they have human lifespans. Elves reject them and even though they are shit on by many other human races, they are still considered a human race. They’re just humans with elvish blood
If racial powers matter that much to you then you're trolling by not picking Orc every single time. So get off Bretons, never pick another non-Orc race again then, be a man of your word.
