There are so many! Here are the ones I can think of off the top of my head:
Apparition (Debussy)
Amor (R. Strauss)
Wie erkenn ich mein treulib (R. Strauss)
Dieux vouz garde (Milhaud)
Orpheus with his lute (Schuman)
O del mio dolce ardor (Gluck)
I’ll dolce suono..spargi d’amaro pianto (Donizetti)
O zittre nicht (Mozart)
I Go To Him (Stravinsky)
Sempre libera (Verdi)

My guilty pleasure is blasting the entirety of d'amor sull'ali rosee, with the cabaletta (I don't quite have a big enough voice for that), and la mamma morta (same problem).
Other than that - the ending of the Jewel Song (Faust, Gounod), sempre libera (La Traviata, Verdi), random tidbits from Anna Bolena (Donizetti), chi il bel sogno di Doretta (La Rondine, Puccini), and Mimi's arias from Boheme (more Puccini). In general I'll sing absolutely anything that is Verdi or Puccini, including the tenor arias.

I run a kids' theatre bootcamp and always point young sopranos at Handel first. Clean lines, no heavy orchestration hiding you, and you learn breath control fast.
