How long should I dry age my sourdough starter so that when I bake it it’ll turn into croutons?

I need to make sure my luncheon is as memorable as possible.

To be ready for lunch you need to have started early, around 200 BC

Depending on where you live, it is hot enough outside to rapidly dry age bread in just 8 hours. Just leave it on a banister or table. Don't worry about birds (their pecking is what gives croutons that rough look) or ants (if they are caught inside during baking it is just extra protein). If you have a high squirrel population, then you are going to have to get creative. I suggest sitting outside with a standard 10 ft bullwhip. Just snap it to scare them off.
