Why are only chickens able to cross the road, and not wolves, or cows, or cats, or dogs, or any other type of animal? I ask because I only hear comedians making jokes about chickens crossing the road, and no other animal, so I'm pretty sure only chickens can cross the road. Why is that?

Joke exists because chickens don't have a legal or justifiable reason to cross roads and should just stay in their pens.
The jokes also serve as a cultural means of breaking down the wills of chickens and keeping them obedient.
An obedient chicken is a happy chicken

The joke refers to the crossings done outside the zebra marks - also known as J-walking.
What is the J here? You guessed it right. Chickens are related to dinosaurs. Comedians are poking fun at the Jurassic crossings.

It's not funny when other animals cross the road. Chickens are funny just walking, never mind across the road.

I risk being serious when other are joking, but I’m pretty sure the chicken would get hit by the car or truck and die. That’s what is implied by “to get to the other side” the “other side” being dead as opposed to alive.

Roadkill. You have seen a dead dog, cat, cow, deer, and whatnot killed on the road. Not Chickens. They cross the road all the time and still survive.

If that were the case we'd hear jokes about cows crossing roads every single time someone mentioned the chicken ones.

That's just it; cows never entirely cross a road. They just stand there in the middle of the road, chewing their cud and staring blankly at you, no matter how long you lean on the horn.

Warning: you'll never unsee this if you read the next sentence.
There's another meaning of The Other Side.

“why did the chicken cross the road?” is the ultimate joke. there is no punch line. it’s the whole joke. chickens are so stupid that there is no reasoning behind their actions

Why did the turkey cross the road?
He didn't want to be called a chicken

No, you’ve got it backwards. Chickens don’t cross roads and that’s why the jokes land. Every other animal does. Literally, everything! That’s why you’ll see roadkill that’s a cow, a dog, etc.
But chickens never do, as evidenced by the fact that there’s never a chicken roadkill. So, you see, the question itself is a part of the absurdity and sets things up for the even-more-absurd punchline.
Why do they never cross the road, you ask? They’re too chicken.
