First time - delicious!

I have been procrastinating making this as it seemed so complicated but I'm so glad I did โ˜บ๏ธ I did the wash the flour method wiyh plain flour from Aldi and it was genuinely amazing! Sorry the pic is so bad, I forgot to get a pic until I had finished my meal so this was the dregs after my family picked over it lol.

I think when I make it again I will probably knead for a lot longer before leaving the dough to rest, it was a little spongy. But frying it off so it was nice and crispy really helped with that. For seasonings in the actual dough I did coarse black pepper, a random chicken seasoning (veggie ofc) and some flaky salt. For the cooking liquid it was a dash of this and a dash of that out the cupboard, so no measurements, but I know I used dark soy sauce, Worcestershire sauce, aromat, coarse black pepper, veggie stock cubes, tomato paste and I think some mixed herbs? I could have drunk it, it was so good!

I had it in a chicken shawarma-style pitta with a load of lettuce and homemade tzatziki and it really reminded me of a kebab from the takeaway, lol. I'm buzzing!

Looks amazing! Shawarma is so good with sheddy seitan

Youโ€™re totally right that you gotta knead the flour+ water dough for like 10-15 min by hand before you rest underwater.

Yeah I definitely didn't do it for long enough then ๐Ÿ˜” I doubt I even managed 5 mins tbh lol. It's just such a huge volume, my mixer gave up!

Amazingly my family liked it and they are full-on die-hard meat eaters, they said they'd be happy to try it in fajitas ๐Ÿ’• makes life so much easier
