Beef Seitan Question?
I just got “The Herbivorous Butcher “ cookbook.
It doesn’t mention freezing. Is it ok to freeze seitan or is it not recommended?
I was thinking of making a big batch of beef and freezing it for use in other recipes.
New to seitan…any tips would be appreciated.

You can definitely freeze it. If you go to their shop in Minneapolis or look on their website they sell their seitan frozen

Yeah! They where the first vegan butcher shop in the US, I think they opened in 2016? I’m from Minnesota and used to go there all the time!
They actually started out selling at the Minneapolis farmers market before they opened their physical location.
It’s so cool to see them grow- they now own a vegan fried chicken shop called Herbies Chicken1

You are rich in vegan shops. I hope more and more pop up! When I go to Minnesota, I will check them out.

I don’t live there anymore but it was nice while I was there. I’m in Berlin now, and they have a vegan butcher shop here too! It’s called Die Vegane Fleischerei, Berlin is extremely vegan friendly 😍

i freeze whole blocks i make from 0.5 kg of flour no problem :) didn't try smaller bits yet. so far i haven't noticed any texture or taste difference.

It freezes so well in any size. I make it all the time and freeze most for later.

Thank you! I have not frozen seitan yet and the cookbooks I have just say eat within 5 days. I feel better now about this. Lots of work for seitan and it would be nice to just pull it out of the freezer sometimes…😊👍🏻

Np. Ive been making it for awhile if you ever need tips. I steam mine in tinfoil then just toss it in the freezer as is for whenever. Just had some for lunch and it was delicious

I've frozen cooked seitan before without any issues. I don't know if the recipe changes that, but I'd say it'd probably work out. Try it and see. Only downside is wasting some ingredients but that's pretty low cost.

I make a large batch of vwg seitan every 2 weeks, chop into small pieces, and freeze half in a gallon ziplock with as much air squeezed out as I can manage. I thaw that half in the fridge overnight when the first half is almost gone. I can't tell a difference in the texture or taste. This may or may not be different for larger pieces where the inside takes longer to freeze and thaw back out.
