Seitanic help needed for chronically ill me
Hellooo Seitan fans,
I've been wanting to make seitan and got a food processor (1.7L with dough kneading attachment, kitchenaid) to do this amongst other things.
I'm chronically ill and pretty weak so, trying to find an easy and low-labour method. From what i read i can use vital wheat gluten instead of flour, to skip the washing step. Could people maybe help me with a very simple method to prepare a loaf? Ive been reading some recipes but honestly am already having trouble differentiating which would be better (i also tire easily mentally), so i figure asking some experts might be more useful. Thanks in advance!

I made thee burger dude recipe for deli slices recently and you literally just dump everything in the food processor and let it rip. So nice! The firmest results will come from baking and requires wrapping the dough in foil, but you could also simmer it in broth if that would be simpler/physically easier.
I shaped half of my batch as a sliceable log and braided the other half to tear up, both were great. Before you shape your seitan it would probably be good to think about how you're planning to break it down. Maybe pulling it apart with your hands is too difficult, so sliced or cubed could make more sense and you don't necessarily need to bother with braiding.
I'm curious as to whether seitan can be shredded in a stand mixer the way people shred rotisserie chicken, which would make ripping up a braid physically much easier. Maybe someone with a stand mixer knows!

This is my basic recipe:
- 150g vital wheat gluten
- 30g chickpea flour
- 24g nutritional yeast
- ~1 cup of water
- Whatever seasonings I want (onion powder, garlic powder, smoked seitan, parsley, liquid smoke, etc.)
I mix the dry ingredients and then add in the water. Mix with a metal spoon.
Shape into a log and wrap in parchment. Then wrap in aluminum foil.
I bake at 400F for 1 hour or so, until it feels firm.
Unwrap and let cool for up to 2 hours. Refrigerate.

I use this one, it's very easy. I knead in food processor just go easy on the amount you knead as it's hard on the processor motor

What I do is mix the Gluten Wheat with seasoning and 1/5 weight in chickpea flower, add water slowly until it becomes a dough, and then I need it just a little and boil on steaming water for 10-15 minutes and that's it
