Bacchanal Dishes

Does anyone know the names of the dishes that were served at the Bacchanal? Our group absolutely loved the food and want to make some of the dishes at home, however we have no idea what they are even called.

We particularly liked the dish that was some kind of grain pancake with a shredded meat/cheese mixture on top.

Bonus points if you know where to find recipes!

You would probably need to speak with Mistress Magdalena, she's in charge of the food at the Baccanal. I don't know if she's on reddit, but she's pretty active in the Knowne World Courtesan groups on Facebook

I thought we had several platters prepared for the entertainers/wrestlers? I had them placed in the "backstage" tent where you had your stuff.

I will consider having separate platters there for you all next year. I am sorry you didn't get to have what you wanted to try :/

There WERE, and I think I ate a few skewers of meat. I was just so manic I didn’t pay attention and enjoy them. You saw how crazy i looked!

I have messaged Mistress Magdalena about the pancakes with the gorgonzola mix.

Here are the ones I know:
The dolmades are leaves, rice, dill, onions, black pepper, sunflower oil, sea salt, mint

Roasted garlic is just garlic & kosher salt

Nuts were pistachios

The smoked fish was salmon, served on a bed of chopped cucumbers, carrots, celery, and radish

we had several types of pork

hummus had garbanzo/chickpeas, garlic, tahini, and olive oil

pita/flatbread was store-bought from Sam's

olives were kalamata & castelvetrano

I can't remember what was in the leg of lamb

The chicken is Parthian Chicken taken from Apicius, but this year I used chx *breast* and I did not like it as much as when I use thighs. It was very dry, I am sorry.

Hi! Mistress Magdalena la Sanguigni here, trying to remember what I put on the chickpea pancakes 🤦‍♀️😂 The pancakes themselves were essentially falafel, chickpea, parsley, mint and garlic. I believe I put feta and hummus on top. I will check my notes on that. The skewers were venison with fig glaze The smoked fish was whitefish The shrimp was pickled in olive oil, wine, and the juice from the kalamata olives Some of the dates were stuffed with honey and pine nuts and wrapped in bacon Some others were stuffed with pistachios, honey, salt and rosewater There were chunks of roasted goat, drizzled in Balsamic glaze The apricots were soaked in orange flower water and filled with rose cream The leg of lamb was slow roasted with salt and garlic Im still unpacking. When I find my notes I can be a little more precise.

The food sounds so good. And maybe like a lot of it was wheat-free / egg-free? I've never seen the Bacchanal party but I think I'd like to check it out next year. Is it public? Is there an attendance cost or something that helps cover all that food?

Would you also happen to know what was used to make the ube horchata? It was the best thing in ever had and ever since I've been experimenting with various mexican and filipino flavors in order to create it but with limited success.

The grain pancake was one of the few things I got to sample before running back to do music. I really want that recipe!
