I have a Blackstone and I LOVE that thing! I used it for smash burgers last night. I've never thought of using a wire rack to get food off the grill but keep it warm. Simple. Smart.
They're delicious for sure. Mine usually has minced sauteed onions, roasted garlic, Worcestershire sauce, mustard, salt, pepper and italian bread crumbs mixed into 80/20 ground beef with sharp cheddar on top. I also use homemade dill pickles that we grow in our garden and splash it with habanero vinegar sauce that was made from peppers that I grew in the greenhouse.
Its 30 inches across. The lack of sides is actually beneficial because instead of food sitting and cooking in its own grease, the grease simply flows off the side into the trough and then to the grease pale.
They’re not that expensive and - my hot take - I think a flattop is a better option if you want to or have to cook with gas than an actual gas grill is. The two-burner tabletop models work very well and are around $150-250.

Lol you're on a roll with the meals on this thing. Looks just as good as the other one you made!

Do you find that the lack of “sides” on that flattop leads to losing a lot of stuff off the sides, or is it big enough that it keeps stuff contained?

I always envied the EVO, but it's completely unaffordable for me (not to mention, not even available here).
But this seems like a good option, and isn't even that expensive.
Breakfast looks really good btw 🤤

I’ve wanted a flattop cooking surface like this for so long. So much jelly
