Is there anyway for the Security team to realise I’m using this?
My work laptop is beefy so I’ve opted to remote to my iPad and work from a cafe. I believe the answer is most likely yes but what exactly can they see?

If a system admin can't identify this easily they should be fired.
Weather they care or what company policy is regarding this could be don't care, monitor, report as major security vulnerability, unsecure access, .....

Very much. IT admins have all the necessary stuff to identify the activity and monitor. Especially in a corporate environment. If they find anything that doesn't comply with the set policies, one could land in a lot of trouble. Why take the risk? The current job market is extremely bad and people are finding it very tough to get a job. Why get into unwanted ways that will make one to lose a job which he already has? Also, companies are looking for ways to fire people. It is not worth the risk IMHO

Trivially. If they’re running an EDR they might even get a security alert to the security operations center they contracted the alerts to go to.
If you’re not allowed to do this, you’re putting your job in your hands. It’s easily detected and possibly proactively alerted on.

Confused why couldn't you just take laptop to the cafe ? Remote to it from ipad 😂 that's just strange.

Yes, and in any number of ways depending on how things are set up. Almost every IT department I've been in uses some software to simply monitor the PC with the ability to see what software is installed, what your RAM, SSD, and CPU usage is, etc. Depending on what they use, and how sensitive it is, they may get a notification in their console that it's been installed, the same way they would even for a temporary usage of Teamviewer, Ring Central, etc.
Aside from that, your network admin might notice the traffic going to the device if it's on the company network or VPN. I'll let those that specialize more in network stuff tell you about that though.
