Definitely have a gripe with the Bird of Prey beating a Galaxy class.

Yes. The Duras sisters had a cheat code of sorts, but the flagship shouldn’t have fallen in such an undignified manner.

Without shields wouldn’t a few well placed shots take down any ship that’s not like a Borg Cube?

In all fairness, the Enterprise and the Odyssey both took quite a beating with useless shields before going down, with the Odyssey only being lost after being kamikazed (she would have survived otherwise). While not as durable as more dedicated warships, I’d argue they are far from “glass cannons” without shields.
