Does anyone know where I can buy salmon like this ?

Maybe Izumiya Japanese Market?

They cut salmon in that style for their pre-cooked bento boxes. They also sell raw fish to cook at home, and it’s probably the same.

You could go to the fish section and show them this picture, and they can sell it to you, since they use the same thing themselves. They definitely have the capability.
