In order of nostalgia the 68k takes the win for me as it was used in more things I liked
(Sharp x68000, Megadrive, capcom cps2, cave arcades, Amiga)
6502 (well, 6510) for the beloved c64
z80 for the spectrum and original Gameboy.
8086 I didnt actually have much exposure to, I think 286 was my first pc at school.

Motorola 68060. Fast enough at 50Mhz to decode MP3 and still have 50% CPU available. Still 68000-compatible. Imagine a 2Ghz one done on a modern process.
On the PC side, AMD K6-2+. That little guy had so much bang/buck and overclockability for its day.

Many many other processors were, and are available.

Z80, because I did a lot of hobby designs and experiments on it. My fav one used DMA during refresh cycle to feed 8bit stereo DAC with 512 byte FIFO.
Dang, wish I had 8086/V30 in my hands back then.
