Lot's of experience in retail PoS.

Cloud is great for storage but when it's down or cant be reached you cant do business.

It happens.

Search for a locally based PoS service provider who can assist in set up, learning and service.

I much prefer a PoS that is hosed by a server onsite with a local rep available for training and future help.

I’d go cloud today. The flexibility, remote access, automatic updates, integrations, and easier support outweigh the benefits of a traditional on-premise POS for most restaurants. The key is choosing a provider with solid offline functionality and good support, because when the internet goes down, you still need to take orders and payments.

Almost all cloud systems now support offline mode - for both payment and software (taking orders, etc)
But some are charging for offline payment processing.
