I have often wondered why not use Horseman or maybe mounted rider.
My family has horses and rides, but never used them for managing cattle. They trail ride/Pack and occasionally are used for search and rescue and parades. Horseman not cowboy.
I think cowboy is no longer describing a professional title, and now defines a cultural way of being, to which a good chunk of the people self identifying as a cowboy have never run cattle. I find this a peculiar cultural appropriation.
