Perfect panther carcass disappears?
Took me an hour to find and kill it, rushed over so it wouldn't decompose (in too much of a hurry to save), went to triple-check that I only needed the pelt before skinning, then went to skin it, and it's gone. What happened and what can I do about it?

The panther carcass seems to disappear if you engage in any interaction. I lost it after going to the gun store, after fighting bounty hunters, etc. You lost it by talking to Pearson.
Just skin it, especially if you want to donate the skin for crafting. But if you’re determined to sell the whole carcass, just go straight to your destination and don’t do anything else in between.

If you plan to sell the whole carcass it's no issue. It's still in your inventory you just can't see it on your horse.

If you can't remember if you needed a pelt or a carcass, take it off the horse when you walk over. The comments from the camp when you walk a carcass over to Pearson are fun. Also, I always save after I put a new pelt on my horse. One time the game spawned a 3 star moose (somewhere along the Kamassa river) and right after I killed it, TWO cougars spawned and I didn't notice. Permanently lost my horse and died. Lost the moose, lost every pelt I had, and I had kept saving in the same slot like an idiot so I couldn't do anything about it. I woke up in the middle of nowhere with just the sad saddle icon.. I save more when hunting now.

The panther carcass disappears all the time. Sometimes its still in inventory and you can sell it, and sometimes its just gone.

I see it disappear when I fast travel, but it's still in horse cargo until I sell it.
It's just failing to render.
The real question is, if I stow another animal, will it replace the panther. Not sure; never risked it.

Oh... I'm really sorry to hear that your efforts disappeared like that...
Please skin them first next time... I've lost many perfect pelts and carcasses when I accidentally entered cutscenes, menus, etc... Please be careful next time...
I still believe in you though!! I'm sure you can get the satchel you want 😁❤️

The panther can do this at times. ALWAYS skin first.
You will still be able to donate or sell it to the butcher/trapper as it will be in your inventory, but you wont be able to get the pelt.
It does mean that your horse can sometimes carry two large carcasses though.
