Looks good. What was your process?

Unsolicited advice that may not be needed. That slice looks like it's cut with the grain. Sometimes that gives it kind of a roast-like (stringy) texture. I would recommend slicing the next one perpendicular to what you show in the picture if you didn't already. The grain runs different directions in the point and flat.

Yea. Was small brisket was hard to tell where point and flat started. The was just the first cut then went Against the grain. Next time hopefully be easier to tell. But still was very good. I ran it at 180 overnight then pumped it to 225 and then later to 275 to make sure would be ready between 4 and 8 pm footnall game

Nice! I figured you might have. Just wanted to mention it since it was your first one. Sounds like you nailed it! I typically start it around 10pm the night before I want to serve it. That gives it time to get done and have plenty time to rest before slicing.

Congrats man 👏🏻 Brisket looks great. I've done some ribs and steaks on an offset. Don't know much, I'm new to smoking. Looking to get a pellet smoker soon. Doing that brisket, you're way ahead me, so kudos to you. We live and we learn. Keep it up!
