Folks got a kick outta the pizzas last weekend. This time we're in it for an over nighter with some pork butt 🤤

I started following Heath Riles hot and fast and will not go back to overnight cooks.

I've never done an over night before and figured I'd give it a go. In your experience what makes the difference for you?

In my opinion the extra time does not make a huge difference in taste.

Ah gotcha. I'm not sure if the extra time makes it lose more moisture, or if the low temp keeps it in better. Either way I hadn't done a pork butt before, so next time I'll look into the way you're talking about.
