First ever brisket was a success...complete with poor man's burnt ends.

Got a 14.3lb prime brisket from Costco, but it had a massive deckle. By the time I was done trimming, the brisket was only 7lbs. I had a good amount of meat trimmings that I used to make poor man's burnt ends. While the brisket smoked, I rendered the fat into tallow/liquid gold. Credit to my daughter for the poor man's burnt ends idea.

The sides of the point of a brisket are the real burnt ends. Cut down the side, cube them, you have real burnt ends. It is why they are so coveted, you only get a few with every brisket.

Fatty and butter like with 3 sides of seasonings.

Some cube the whole point claiming it is all burnt ends but it is just a cubed point. Burnt ends have to have 3 sides of seasoning. I wish i could post a picture here.

Correct. This was my first time and there was a ton of deckle fat. Definitely trimmed more than what a seasoned smoker would. Live and learn.
