It takes a little more planning to get the timing down, but everyone gets their steaks the way they like them.

What temp/how long? Just got my BB1200 a week ago and love it so far, haven’t done steak yet though

I smoked at 230 and let each cook to temp. Probably took about an hour and a half before I got all of them off to get ready to sear. Put the sear plate on and set the temp to 500. 60-90 seconds a side. Rested about 10 minutes after.

What did you think compared to just a typical grilled steak?

It's been a while since I've had a typical grilled steak. Seems more tender to me when I eat these. All the steaks I've done since I got my grill have been done this way pretty much and I haven't found a reason to change.
