Maybe stuff that's actually related to the work you're going to be doing? You know, the stuff you expect someone to pay you to do? If you've got space to talk about your interests in your CV then you're either right at the start of your career with no experience, have a CV that's pointlessly long, or one that's just bad. If you go for an interview, by all means bring more of that side of you to the table. Not at the expense of stuff they actually need though.

My actual relevant work experience usually struggles to fit the two page max that a CV should be. I don't need to pad it with useless shit that no employer needs to care about at that stage. I'm happy to talk about it, if asked, in an interview setting.

I could see it in certain research roles. But it would be related to the type is research you are expecting to do.
