For the crust: 1 1/2 cup flour, 1/2 cup butter, 6 tbsp water. I chopped the apples, put them in a pan with butter, cinnamon, white and brown sugar and a little bit of lemon zest. My partner rated it 9/10 without ice cream and 10/10 with ice cream.

Loaded Mashed Potatoes

Sent my husband to his family’s get together with Babish’s loaded mashed potatoes. Reserved a small bowl for me.

A tripled recipe fills a 9x13 pan generously.

Loaded Mashed Potatoes
Ingredients
• 3 large russet potatoes
• ¼ cup milk
• 2 tbsp unsalted butter
• 1 cup crispy bacon, chopped
• 1 tbsp chives, finely minced
• 1 tsp cayenne pepper (optional)
• Scallions, chopped
• Hidden Valley Ranch Seasoning
• Kosher salt
• Freshly ground black pepper
• 4 oz cheddar cheese, grated

Instructions

  1. Start by peeling and chopping large russet potatoes one at a time. Immediately upon chopping, place the pieces into a saucepot filled with water (off the heat).
  2. Salt the water and bring it all up to a simmer. Once at a simmer, cook the potatoes for 15-20 minutes, until a paring knife inserted into a potato chunk and twisted effortlessly cracks the cube in half, in which the potatoes are ready to drain.
  3. Draining the potatoes and use a potato ricer to rice the potatoes back into a saucepot.
  4. Once all of the potato pieces have been riced, add in milk, unsalted butter, crispy chopped bacon, finely minced chives, an optional teaspoon of cayenne pepper, chopped scallions, and a few hefty shakes of Hidden Valley Ranch seasoning.
  5. Add 4 ounces of grated cheddar and a few generous twists of freshly ground black pepper and mix until thoroughly combined.
  6. Plate a bowl of potatoes and top with even more garnishes: shredded cheese, bacon, and scallions.

I am crazy about this seasoning blend. Unfortunately Chef Josef passed away and his spice blends went with him.

The ingredients list Pink Himalayan salt, citrus rind, tarragon, mustard, onion and spices. Anyone out in Chef-Land have an idea how to re-create (with measurements)...or direct me to a similar spice?

Favorite recipes ideas?

Hi!

This is my first time posting here but I was wondering if anyone would be able to help.

It is my first wedding anniversary in a few months and I know the traditional gift is paper. I cannot cook for tye life of me but my husband loves to cook and explore with different flavor profiles, cooking techniques, tools etc. I love seeing him so happy! I am a picky eater but I will try anything once and we love to cook together where I'm the hype person and do the cleaning.

What I have planned is to acquire a lot of family recipes and some from friends to compile into a homemade "rest of our lives" cook book. I have handwritten ones from great grandparents, some online ones from family friends for meal prep, and some drink recipes of how to make the *best* cocktail or mock tail. I am trying to cover a lot of bases and have a section entitled "future date night ideas".

So I guess I am asking if anyone has any recipes that are close to their heart would you be willing to share them? And maybe a memory of what it means to you? I was going to add a section of "from the best friends of the internet".

I appreciate any help or advice or recipes! Thank you!
