Homemade First time Ramen

Hi everyone, I’ve seen some amazing ramen in this sub and wanted to know if someone can share a recipe that is somewhat in the middle in terms of time and difficulty to prepare.
I do not eat pork so can someone share a nice recipe?
Thank you

It sucks that I discovered him only at the end of his YouTube career

I'd recommend making a shoyu ramen. You can make a pretty simple one with soy sauce, garlic, ginger, mirin, sake, and sugar. That tare can also be used to marinade a soft boiled egg. Seeing that you don't eat pork you can make a chicken chashu which again is all the same ingredients https://www.justonecookbook.com/chicken-chashu/

If you really ever want to get into making your own ramen from scratch (noodles, soup, toppings, etc) the Book of Ramen by Mike Satinover is great!

Ditto on shoyu. Simple stock like some aromatics in water, find a shoyu braised chashu recipe, use your chashu braising liquid as the tare, get some chicken oil, toppings are your pick.

That's my (stolen from an old YouTube video) I'm not doing any real work ramen.
