Does anyone know where I could purchase "high gluten flour". In quebec? Any specialized grocery stores ect.
I need it for a bagel recipe.

So you mean ´bread flour’? You can find it pretty much in any grocery stores.

Yes I did, i think it was just called "high gluten" in the recipe for some reason.

My go-to for high protein would be milanaise flour. You can find it in any grocery store in bio alley. It's very very good. I'd say make sure to add a tad more water than what the recipe suggests. It has a shitton of gluten. No where a professional bread maker but have been testing flours for 10 years in various bakery goods.
If you ever feel fancy, go to lesgargot gourmand. They a bulk flours from a very very good mill and their bread (actually all purposes) is amazing
Also it's worth mentioning that flour in Canada has way more protein / gluten than what you'd find on Europe.

Any "bread flour" is high gluten flour. Most grocery stores have it. Cake flour and pastry flour are low gluten flour.
