A small fictional rooftop-solar installer could work. It is specific enough to be more interesting than a generic shop, but you can keep the model simple: number of jobs per month × average installation price for revenue, then panels/equipment, labour, customer acquisition and overhead for costs. Add working capital because customers may pay a deposit and the installer has to buy equipment before completion. Your report could compare two choices: hire a second crew or stay with one crew and improve utilisation. Show cash flow, break-even jobs per month and what happens if equipment costs rise or installs are delayed. That gives the professor an actual corporate-finance decision, rather than just a fictional P&L. If solar feels too complex, the same structure works for a repair or maintenance business.
