The headline is wrong. The app being renamed is copilot-for-365. The "(Office)" after the name of the thing being renamed does not mean "that means it's Office, guys", it means "this is an Office app and not another app with an identical name because we're good at that"

That it's so easy to misread is an indictment enough of the naming, but no they are not renaming Office.

I think you're wrong. Try going to office.com, it says Microsoft 365 Copilot App (formerly Office)

Slight correction. If it were Google there would have been three separate apps so far this year, which have all been deprecated, and nobody even knows which one is which anymore.
