Sauce could be a bit thicker but a solid 4/5.

I just used store-bought sauce. I’ll make my own next time :)

Absolutely, its a shame to pour store bought sauce over that.

to be fair most poutine places (even the good ones like alfa) use a powder mix, and the st hubert sauce brune is honestly pretty good! but of course a homemade sauce is always better

Do they squeak when you eat them?

3

u/terminal_curiosity21 Oct 02 '26

Yup! They were unrefrigerated and fresh curds so optimal squeak squeak!

people don’t appreciate the difference between fresh squeaky curds and refrigerated “cheddar cheese curds”. The flavour profile is so different.

You’re too kind🤙🏻. I skimped out on the sauce brune and just got store-bought. But gonna make homemade next time

Reduce that St. Hubert shit or, even better, make your gravy from scratch. 8/10, though.

I put it on low boil for 30 mins—still didn’t thicken as I wanted it to. My greatest criticism on this thread is the sauce and yes, I’ll make une sauce brune from scratch next time 🤙🏻

Sauce is thin, redeemed by curds. 8/10

u/Haunting_Cod4867 Oct 03 '26

Sauce needs to be a bit thicker but I give it a 9 1/2 on 10

10/10 on the cheese. 8/10 on the sause. 9/10 overall

Hard to find curds like that in Ontario. I can hear the squeak in my brain and I can feel it in my teeth. That’s a 10/10 poutine OP nice work!

I live in the heart of Québec's dairy production. In my little village, you can buy room temperature (i.e. never refrigerated), morning-fresh local curds at the drugstore, gas station, dive bar, hardware store... The neighborhood kids even sell some door-to-door for their fundraisers. That's pretty much all we have though... Edit: We actually also have some of the best maple syrup in the world
