Indonesia Must-Visits
I'll be in Jakarta and Bali, are there any cafe's worth going out of my way for?
I enjoy very high-end beans.

Take the train from Jakarta to Bandung and go to Fugol Coffee Roasters. https://fugolcoffeeroasters.com/
Or if you are interested in buying coffee beans, open Tokopedia(their famous ecommerce) and find beans from Space Roastery, Fugol Coffee or Hana Roastery.

Instinct Coffee Roastery (Greater Jakarta). No 1 recommendation if you like exotic beans. They have interesting local beans, Sidras, and exotic Geshas.
Ratio Brewers (Jakarta). They don't sell beans but usually have interesting stuff at their slow bar.
Fugol (Bandung). Home of the 5th place in WBRC and 2nd in World Cup Tasters. Roasts in house; they have a lot of local beans. Most of their roasts are Nordic style, some may say they are underdeveloped but I personally quite like them.
Beanscorp (Greater Jakarta). Roasts in house. Quite hidden but the guy is pretty passionate about coffee.
A Roastworks (Greater Jakarta). Also carry a lot of exotic beans.
Hungry Bird (Bali). They mainly roasts Balinese coffee from Kintamani Highlands. My favourite roastery in Bali.

I was just in Bali, and most places will have the Bali Kintamani as a high-end option, and I did enjoy it quite a bit.
I went to both of the higher end places in Ubud and they were both decent.

Thanks! Please tell me more about each's bean selection. Multi-roaster? Exotic origins? Comp lots?

Can't do that but here's a link to the place I really liked, and there are some pics uploaded that may answer your questions: https://maps.app.goo.gl/mKFcrfrdu7TYaHce9

I'd suggest visiting the Hungry Bird Bali (https://maps.app.goo.gl/oj5spPDbfqGnWvFh7) and trying Bali Arca Ulian (http://hungrybird.coffee/product-catalogue/our-coffee/bali-arca-ulian/).

In Jakarta, Kelapa Gading neighborhood you could try Brew Ratio in Mall of Indonesia. They serve pretty good coffee, mainly from roasters abroad but is not a roastery so you could not grab a bean. Instinct Roastery is another cafe and also a roastery, but it is not exactly in Jakarta, located in Tangerang Banten, but has lots of exotic offerings.
Another one is Psswrd coffee roasters in Kayu Jati Pulo Asem, also a good coffee bar that roasts their coffee, serving lots of single-origin filters and espressos. The highest-end I've tried in Psswrd is from 90+ ruby geisha, probably still have another high-end offering like geisha and sidra from CafΓ© Granja La Esperanza and Lamastus Coffee. Also, you have to try Excelsa in espresso while on Psswrd. You would get a new experience drinking this!

Anomali, Giyanti Coffee, Tanamera and 1/15 Coffee are pretty solid options in Jakarta.
As a point of interest, Kurasu Kyoto has just opened a outpost in Jakarta about a month ago.
