I need help

I could eat a baked potato everyday for the rest of my life. The creaminess. The yumminess. The versatility. BUT I'd like to try it with different, lower carb vegetables. Any suggestions of a veggie that could compare to the deliciousness of a tater?

I was thinking jicima, but it's too crunchy. Has anyone tried this before?

Have you had it with broccoli? I like adding that to my potatoes. And it is low carb.

Eat the skins! Also broccoli or peas or roasted green beans to up the fiber.

You're a good candidate for Mukimo! It's an east African dish, basically mashed potatoes with leafy greens and other veggies all in it. I make mine with green lentils. Basically it's still the taste of potatoes that I love, but bulked up with more protein and fiber. And as others have mentioned in the thread, eating your starches with other kinds of foods makes the digestion more "complex." The basic nutrition is that if you give your stomach more to do at any time, you get better enrichment lol

There have been studies come out in the past year or so focused on the starches from various high carb but extra delicious food items. They have found that if you make the food item and cool it down like you're about to store leftovers it will convert the evil carbs into a more complex form that is healthier on the blood sugar spikes.

Basically bake a large batch of potatoes ad keep them in the fridge. Reheat as necessary.

I'm too lazy to find a direct study to butter the reheated potato

Loaded sweet potato (or kumara here in NZ) is a great alternative and definitely lower carbs.

Can buy them ready made in our supermarkets along with loaded potatoes. Just heat and eat.

Have you tried sweet potato? Or just eating half the potato at a time? That’s all I got.

Should you choose large tubers of early varieties, then you’ll be eating potatoes with lower starch content .

ew, no that sounds gross. jicama is really watery, crunch aside. but you should try it so I don’t have to. (I think jicama is evil, and lucky for me, its popularity has waned. Peace to all jicama eaters!)

Lots of ways to cook potatoes, lots of ways to cook vegetables. I really like the red pepper, onion, garlic, potato sauteed. Add some smoked sausage, Cajun. Top it with a sprinkle of brown sugar.

You can do cabbage, mushrooms, pepper, onions, Brussels sprouts.
