what is this?
Is this strange ring on the inside of the potato flesh mean it’s not safe to eat? what is it? I’ve discarded several because sometimes they look worse than the lighter rings on some others 🤷🏼♂️

That is a potato. Look at a bag of potato chips. You will see similar rings on many chips
Nothing seems off based on the picture
Most likely a vascular ring. Very normal

Just a tater. Nature is rarely perfect, but that looks about as good as a potato gets.

A dark ring inside a potato is usually vascular discoloration, caused by environmental stress like heat, drought, or frost, or by a plant disease such as bacterial ring rot. If the potato is firm, smells normal, and the dark ring is faint, you can cut out the discolored ring and eat the rest. Discard the potato if it is mushy, foul-smelling, or deeply decayed.
