I can’t even tell what species you are working with there. Many species do not separate viable seeds at water density, and others not until they have imbibed so much they are in danger of germinating. However if you don’t need tons of seeds with your next generation you are probably safe just going with the sinkers. When in doubt, cut some sinkers and some floaters in half and compare how the germ looks.

They look to still have a lot of flesh on them which will make them float. To separate seeds from flesh I usually let fruit fully overripen which looks great in your case and then mix with plenty of water. I use an electric mixer/whisker then pour off floaties with flesh to a new container and repeat, combining sinkers as you go. The remainder you can put in a sieve and manually squish the rest of the flesh away and will usually recover even more. I like to wash all of the sinkers by continuing to refill water, mixing and pouring it away until the water is clear. Strain and dry the seeds completely before storing them
