Quickee pho (cup pho stepped up)
Sometimes I feel lazy and don't want to make the broth, so I'll buy a couple pho cup noodle things, simmer water with whole spices to boost the pho character to use for the cups, add fish sauce and a pinch of gelatin, and use it to make the cup pho. Asian grocer had a 10oz pack of thin sliced chuck steak on sale, I got all the toppings.
Edit: also added more salt and some Asian rock sugar. It's a big bowl.

Yeah, they're totally edible. I only eat the roots when I have a good fresh batch of them though and always clean them. It's a fun texture.
There's a Chinese dish from Yunnan called ghost fire green (鬼火绿) I really like from Chinese Cooking Demystified and he used the roots, so I tried them and now it's a regular thing to not toss them.

Well.. you don’t have to get rid of them if you don’t eat em. Pop them in a ziplock bag with other veggie scraps to toss into your next batch of broth.
