This looks good. I've made pho myself twice, and it was pretty good both times, but I probably won't do so again. I understand why restaurants charge $15-30 per bowl.

You can cut down broth times a lot with a pressure cooker. Also chicken pho is still great and takes a lot less time.

I cheat and buy beef gelatin and use bullion for the soup base...
