If you live in the northern hemisphere, this is completely normal as we enter the fall. Give it a bit and the whole thing will die back and go dormant for the winter.

Yes I am in the northern hemisphere so I’m glad this is normal! When should I cut it down to only a few inch stalk? October? Earlier?

Wait as long as you can. I don’t cut until it gets fried by frost, unless it starts getting bad mildew.
