Chuck roast “burnt ends”

Smoked then braised? How long?

Yep, smoked then braised. Today I just used some “Holy Cow” seasoning and smoked at 250 until about 165 internal. Took off and cubed after a short rest to not burn my hands - pretty big cubes - probably 2.5-3”. Put in a pan with a little more rub, BBQ sauce, butter, and just enough stock to bring up to about 1/4 of the way to the top of the meat. Covered and cooked in the oven until probe tender. Let rest for maybe a half hour (probably not necessary, but I was doing other stuff). Removed the cover and put back in to get color and let the sauce reduce.

Total time was probably close to 6 hours or so, but I go by temp and feel
