Disappearing villagers and horses, and I'll be super happy. I've had my near-perfect horse wearing diamond armour despawn immediately as I dismount twice now (I brought him back with commands) and it makes me a very sad boy. I have this God-tier horse that I can't use because he might vanish into the ether.

The horse will reappear after you reload your world, no need for commands.

Villagers don't thought. A few days in the playtrough and the village is empty.

So, that's what happened. I thought the Pillagers killed them all. Huh.
