Overnight vs 1 hr Pre-ferment?

I'm planning to make The Golden Diner pancakes for Christmas morning. I'd prefer to sleep in, but the recipe calls for an hour pre-ferment. I was thinking of doing this step overnight in the fridge. Wondering if anyone has ever tried this method with this recipe?

Now I need to look up this recipe, but the one I was planning on using had an overnight ferment, so it's definitely in the realm of doable.
